Avocado Almondaise Tartines

Avocado tartines are my favorite snacks, by far! These delicious one-bite appetizers are at the same time creamy and crunchy, and they feel like a full-blown party in my mouth. And the best thing about them? They are so easy to make 一 it will only take you about 30 minutes or so to prepare them.

  • 1 cup blanched and peeled almonds,
  • 1 cup original almond milk,
  • 1 tablespoon mustard,
  • 1 lemon (you are going to use both zest and juice),
  • 2 or 2 ½  teaspoons dried turmeric,
  • 2 tablespoons olive oil,
  • salt and pepper,
  • toasted or grilled bread,
  • avocado slices,
  • 1 onion,
  • 2 tomatoes.

Here’s how to prepare the tartines:

Step 1: Make the Almondaise

To make this creamy mixture, all you need to do is put in a blender raw blanched and peeled almonds, almond milk, mustard, lemon zest and juice, turmeric and salt and pepper. When the blender is running at full speed, add olive oil. Once you feel that the cream has the right consistency, turn the blender off. Be sure to taste the almondaise because you might want to add some other seasonings.

Step 2: Top the Bread with the Sauce

Now, all that is left to do is to top the crusty bread with the sauce.

Step 3: Add a Bit More Flavor

On top, you can add chopped onion rings, a bit of tomato, and parsley as garnish. Slices of hard-boiled egg are optional.
